Vila do Porto
Vila do Porto is a delicate and elegantly layered aperitivo created by Simon Difford. It expertly balances a rich base of white port with the earthy smoke of mezcal and the bright, citrusy floral notes of Italicus bergamot liqueur, all beautifully grounded by a touch of bone-dry Manzanilla sherry and a few drops of saline. Stirred and served up in a chilled Nick & Nora glass, this highly complex and smooth sipper is elegantly finished with a garnish of skewered green olives.
Ingredients:
15 ml Italicus liqueur
3 drops of saline solution (20g sea salt to 80g water) or a mere pinch of salt
Instructions:
Select and pre-chill a Nick & Nora Glass.
Prepare a garnish of 3 skewered green olives.
Stir all ingredients with ice.
Strain into a chilled glass.
Garnish with skewered olives.
