Midnight Caller
Midnight Caller is a vibrant, bittersweet aperitivo that brilliantly bridges the gap between botanical gin and earthy mezcal. It expertly layers a base of London Dry Gin and smoky mezcal with the complex botanicals of Amaro Santoni, perfectly balanced by a bright, tart split of fresh pink grapefruit and pineapple juices. Shaken with a touch of agave syrup and served up in a chilled coupe, this highly complex, zesty sipper is elegantly finished with an expressed grapefruit zest twist.
Ingredients:
30 ml Hayman's London Dry Gin
15 ml Amaro Santoni
15 ml Pink grapefruit juice (freshly squeezed)
7.5 ml Pineapple juice
7.5 ml Agave syrup (agave nectar)
4 drops of Difford's Margarita Bitters
2 drops of saline solution (20g sea salt to 80g water) or a mere pinch of salt
Instructions:
Select and pre-chill a coupe glass.
Prepare a garnish of grapefruit zest twist.
Shake all ingredients with ice.
Fine strain into a chilled glass.
Express grapefruit zest twist over cocktail and use as garnish.
