A vibrant, agave-based riff on the modern classic Penicillin cocktail. Operating as a ginger-spiced and honeyed Tequila Sour, it brilliantly balances the bright notes of blanco tequila and fresh lime juice with the warming, earthy sweetness of ginger and honey syrups. Shaken and served over ice, it is finished with an aromatic float of smoky mezcal and elegantly garnished with a skewer of crystallized ginger.
Ingredients:
22.5 ml Lime juice (freshly squeezed)
10 ml Ginger syrup
Instructions:
Select and pre-chill an old-fashioned glass
Prepare a garnish of skewered crystallised ginger.
Shake the first 4 ingredients with ice.
Strain into an ice-filled glass.
Float mezcal
Garnish with skewered crystallised ginger.
