Fumosa Rosa
An intricately mixed cocktail full of sweet and smoky flavors. It combines mezcal with ginger liqueur and grenadine for a unique spring profile.
Ingredients:
45 ml Mezcal
15 ml Strucchi Red Bitter (Campari-style liqueur)
22.5 ml Lime juice (freshly squeezed)
15 ml Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
15 ml egg white (pasteurised) or Vegg White vegan egg white alternative
3 drop Saline solution (20g sea salt to 80g water) or a merest pinch of s
Instructions:
Select and pre-chill an old-fashioned glass.
Prepare a garnish of lime slice wheel (dehydrated).
Shake all ingredients with ice and strain back into the shaker.
Dry shake (without ice) to emulsify.
Fine strain into an ice-filled glass.
Garnish with lime wheel.
