Fumosa Rosa

An intricately mixed cocktail full of sweet and smoky flavors. It combines mezcal with ginger liqueur and grenadine for a unique spring profile.

Ingredients:

  • 45 ml Mezcal

  • 15 ml Strucchi Red Bitter (Campari-style liqueur)

  • 22.5 ml Lime juice (freshly squeezed)

  • 15 ml Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)

  • 15 ml egg white (pasteurised) or Vegg White vegan egg white alternative

  • 3 drop Saline solution (20g sea salt to 80g water) or a merest pinch of s

Instructions:

  • Select and pre-chill an old-fashioned glass.

  • Prepare a garnish of lime slice wheel (dehydrated).

  • Shake all ingredients with ice and strain back into the shaker.

  • Dry shake (without ice) to emulsify.

  • Fine strain into an ice-filled glass.

  • Garnish with lime wheel.
