Ensamble II Highball
Ensamble II Highball is a light, effervescent, and beautifully sophisticated long drink designed to let the complex characteristics of premium mezcal shine. Built straight in a highball glass over plenty of fresh ice, it features 50ml of wild-harvested Corte Vetusto Ensamble Mezcal topped with 160ml of premium tonic water (ideally a tonic with a hint of lime or a bright Mediterranean tonic). Herbaceous, crisp, and delightfully refreshing, this clean highball is elegantly finished with a garnish of a fresh rosemary sprig and briny green olives.
Ingredients:
160ml Tonic water (we like Schweppes Selection Tonic & Touch of Lime orFever-Tree Mediterranean Tonic)
Fresh rosemary and olives to garnish
Instructions:
Prep the glass: Fill a highball glass to the brim with fresh ice.
Pour the base: Measure and pour 50ml of Corte Vetusto Mezcal directly over the ice.
Add the effervescence: Slowly top the glass with 160ml of your preferred premium tonic water to preserve the bubbles.
Garnish and serve: Drop in a sprig of fresh rosemary and a couple of olives to add a beautiful, herbaceous, and savory aroma before serving!
