Conejada

Conejada is an ultra-refreshing, botanical highball by Mezcal 400 Conejos that pairs crisp garden flavors with a delicate hint of smoke. It is crafted by muddling a sprig of fresh dill with 15 ml of sweet agave nectar, 15 ml of yellow lemon juice, 15 ml of green lime juice, and a splash of water. Shaken with ice alongside 60 ml of smooth 400 Conejos Espadín Mezcal and 60 ml of fresh cucumber juice, it is strained into a tall glass and topped with crisp sparkling water. The drink is finished beautifully with a fresh cucumber wheel and a bright sprig of dill.

Ingredients:

  • 60 ml of 400 Conejos® Espadín mezcal

  • 1 sprig of fresh dill (chopped)

  • 15 ml of agave syrup

  • 15 ml of yellow lemon juice

  • 15 ml of lime juice (Colima or Persian)

  • 60 ml of fresh cucumber juice

  • 60 ml of cold sparkling mineral water

Instructions:

  • In a shaker, muddle the dill with the agave syrup, the juice of both lemons, and 15 ml of water.

  • Add ice, then the cucumber juice. Shake well and strain into a chilled highball glass filled with ice and a cucumber slice.

  • Top with sparkling water, stir gently, and garnish with a sprig of fresh dill.
