A Still Dawn

A Still Dawn is a bold, beautifully spirit-forward sipper that expertly anchors an equal-parts split of earthy, smoky mezcal and crisp London Dry Gin with the bittersweet complexity of dark amaro and rich crème de cassis. Stirred to a proper chill with a delicate touch of pear bitters, this highly complex, late-night cocktail is fine-strained and elegantly served up in a classic Nick & Nora glass.

Ingredients:

• 25 ml Del Maguey Vida Clásico Mezcal

• 25 ml Hayman's London Dry Gin

• 7.5 ml Joseph Cartron Double Crème de Cassis de Bourgogne

• 5 ml Amaro (e.g., Averna)

• 2 dashes of Pear Bitters

Instructions:

• Select and pre-chill an Nck & Nora glass.

• Stir all ingredients with ice.

• Fine strain into a chilled glass.
