Ninth Island

Ninth Island is a lush, tropical highball that brilliantly grounds the classic, highly refreshing pairing of pineapple and coconut water with the earthy smoke of artisanal mezcal and a warming touch of allspice dram. Shaken with fresh lime juice and a hint of rich agave nectar, this beautifully balanced cooler is strained over fresh ice and elegantly finished with a savory matcha-salt rim.

  • Select and pre-chill a Collins glass.

  • Rim glass with matcha tea and salt.

  • Shake all ingredients with ice.

  • Strain into an ice-filled glass.
