Tahiti Pearl is a remarkably sleek, elegant, and smooth cocktail that reimagines a traditional herb-and-citrus profile with a fascinating texture. To craft it, add 1.5 oz of Ojo de Tigre Mezcal, 8 to 10 fresh mint leaves, 1 oz of tart lime juice, 1 oz of simple syrup, and 2 dashes of lemon bitters into a shaker filled with plenty of ice. Shake vigorously, then double-strain the liquid through a fine mesh strainer into a chilled coupe glass to catch any loose mint pieces. The striking finishing touch: carefully float exactly 3 drops of olive oil onto the surface of the drink, then garnish with a single, pristine mint leaf.
Ingredients:
1.5 oz Ojo de Tigre Mezcal
8-10 Mint Leaves
1 oz Lime Juice
1 oz Simple Syrup
2 dashes Lemon Bitters
3 drops Olive Oil
Instructions:
Pour all ingredients but the olive oil into a shaker with plenty of ice and give it a good shake. Serve in a cold coupe glass using a fine strainer to catch stray pieces of leaves. Finish by adding three drops of olive oil on top, and decorate with a mint leaf.
