Ruby Diamond
Ruby Diamond is a brilliantly balanced, jewel-toned sour that elegantly marries the earthy smoke of mezcal and the crisp botanicals of London Dry Gin with the bittersweet depth of Americano Rosso. Shaken with a bright, tart split of fresh lemon and seasonal blood orange juice, this highly complex and spirit-forward aperitivo is served up in a chilled coupe and perfectly rounded out with a touch of saline.
Ingredients:
30 ml Hayman's London Dry Gin
22.5 ml Savoia Americano Rosso
15 ml Lemon juice (freshly squeezed)
7.5 ml Blood orange juice
3 drops of saline solution (20g sea salt to 80g water) or a mere pinch of salt
Instructions:
Select and pre-chill a coupe glass.
Prepare a garnish of a blood orange wedge.
Shake all ingredients with ice.
Fine strain into a chilled glass.
Garnish with a blood orange wedge on the rim.
