Mezcal Paloma

Mezcal Paloma is a smoky, refreshing upgrade to the classic cocktail that brilliantly pairs the roasted agave depth of Palenque Mezcal with crisp citrus and fizz. It builds its vibrant base directly in a salt-rimmed, ice-filled highball glass by combining 2 oz of the artisanal mezcal, 0.5 oz of fresh lime juice, and 0.5 oz of agave syrup. The mixture is gently stirred for 10 seconds to integrate without losing dilution, then slowly topped with 3 oz of crisp grapefruit soda to preserve its effervescence. This bright, sun-kissed sipper is finished with a fresh grapefruit wedge and a lime wheel for an effortlessly festive presentation.

Ingredients:

  • 2 oz artisanal mezcal (espadín for roasted agave balance)

  • 3 oz grapefruit soda (crisp fizz)

  • ½ oz fresh lime juice (zesty)

  • ½ oz agave syrup (natural sweetener)

  • Pinch sea salt

Instructions:

  • Prep glass: Rim a highball glass with salt (optional) and fill with ice.

  • Add mezcal and citrus: Pour 2 oz mezcal, ½ oz lime juice, and ½ oz agave syrup.

  • Stir gently: Combine for 10 seconds to dissolve the syrup without diluting.

  • Top with soda: Slowly add 3 oz of grapefruit soda to preserve carbonation.

  • Garnish and serve: Add a grapefruit wedge; stir once more.
