Keys Razor
A cooling but spicy melon cocktail. It marries the smoky profile of mezcal with the sweet, fresh flavor of muddled cantaloupe, bright lime juice, and a kick of fiery jalapeño agave syrup.
Ingredients:
1 oz. mezcal
1 oz. blanco tequila
3/4 oz. honeydew-jalapeño-mint syrup
1 oz. fresh lime juice
Honeydew Jalapeno Mint Syrup:
1 cup honeydew
1/4 oz. mint
1/4 oz. jalapeño
16 oz. granulated sugar
8 oz. water
Instructions:
Add all of the ingredients to a shaker with ice and shake. Strain into an ice-filled glass, top with ice, and garnish.
Honeydew Jalapeno Mint Syrup: Remove the seeds and rind of the honeydew before cutting it into medium chunks. Remove the stem and deseed the jalapeño before chopping it into smaller pieces. Throw all the ingredients into a blender and blend on high. Strain through a chinois. Will keep for 4 days in the refrigerator.
