Jaguar Sour
Jaguar Sour is a dramatic, tropical variation of a traditional sour that pairs bold tropical flavors with striking artistic flair. It is built by combining artisanal mezcal, bright passion fruit pulp (maracuyá), tart lemon juice, mixed berry jam, egg whites (or aquafaba), and a touch of activated charcoal for a deep, mysterious hue. The mix is shaken vigorously for 30 seconds to build an incredibly thick, frothy head, then strained into a glass beautifully painted with interior accents of berry jam and garnished with an eye-catching jaguar template design right on top of the foam.
Ingredients:
60 ml Mezcal Mitre Origen
45 ml Passion fruit pulp
30 ml Lemon juice
30 ml Egg whites or 1 1/4 oz. of Aqua Faba.
Red fruit jam
Activated carbon
Instructions:
Place all the ingredients in a shaker and shake for 30 seconds to create foam. Add a few dots of jam to the inside of a glass and serve.
Decorate with a jaguar topper on the foam.
