Dónde Estás, Yolanda
The Dónde Estás, Yolanda is a dry, elegantly layered creation by Simon Difford that beautifully marries the earthy smoke of mezcal with the bone-dry, nutty salinity of fino sherry. Softened by a refreshing splash of coconut water and a touch of syrup, this sophisticated, delicately smoky sipper is stirred and served up in a chilled coupe.
Ingredients:
45 ml Coconut water
2.5 ml Gomme syrup
2 drops of saline solution (20g sea salt to 80g water) or a mere pinch of salt
Instructions:
Select and pre-chill a coupe glass.
Prepare a garnish of float dried coconut.
Stir all ingredients with ice.
Fine strain into a chilled glass.
