Dirty Mezcal Tonic

Dirty Mezcal Tonic is a savory, effervescent highball that puts a refreshing, crisp spin on the traditional gin and tonic. It highlights 1.5 oz of earthy Mezcal Creyente Cuishe combined with a splash of olive brine to give it its uniquely "dirty," savory undertone. Built directly in a round stemless wine glass or rocks glass over fresh ice, the mixture is topped off with premium tonic water and a squeezed lime wheel. A cocktail pick threaded with three green olives and a fresh rosemary sprig completes this beautifully balanced highball.

Ingredients:

  • 1 1/2 oz Creyente Cuishe Mezcal

  • Splash of olive brine

  • A few fresh rosemary sprigs

  • Tonic water (to top)

  • Garnish: 1 rosemary sprig, 1 lemon wheel, and 3 olives

Instructions:

  • Prep the glass: Rub the fresh rosemary sprigs around the inside of a highball glass to release their aromatic oils and flavor the glass.

  • Combine: Fill the highball glass with fresh ice, then add the Creyente Cuishe Mezcal and the splash of olive brine.

  • Top & Stir: Top the cocktail with tonic water and give it a gentle stir to combine without losing the carbonation.

  • Garnish: Finish by placing a fresh rosemary sprig, a lemon wheel, and 3 olives into the glass before serving.
