Camarón
Camarón is a wonderfully complex, sweet-and-sour highball that masterfully grounds the earthy, artisanal smoke of mezcal with the rich, honeyed fruit of vintage white port. Shaken to a proper chill with tart fresh lime juice, bright orange juice, and a sweet dash of simple syrup, this highly refreshing cooler is strained over fresh ice, topped with sparkling water, and elegantly finished with a lime wedge.
Ingredients:
22.5 ml Del Maguey Vida Clásico Mezcal
22.5 ml Lemon juice (freshly squeezed)
3 drops of saline solution (20g sea salt to 80g water) or a mere pinch of salt
Instructions:
Select and pre-chill a coupe glass.
No garnish to prepare.
Shake all ingredients with ice.
Fine strain into a chilled glass.
Serve naked, without garnish.
