Brisa Dulce

Brisa Dulce is a vibrant, effervescent highball that marries tropical sweetness with an earthy undertone of smoke. It shakes up 1.25 oz of Paquera Espadín Mezcal with 1.5 oz of fresh cantaloupe juice, 0.75 oz of lemon juice, and 0.75 oz of sweet agave syrup. Strained into a highball glass rimmed with savory sal de gusano (agave worm salt) over fresh ice and slapped with mint, it is topped off with crisp club soda. The resulting drink is an incredibly refreshing, well-balanced, and highly aromatic agave cocktail.

Ingredients:

  • 1 1/4 oz Paquera Espadin Mezcal

  • 1 1/2 oz Fresh cantaloupe juice

  • 3/4 oz Agave syrup

  • 3/4 oz Fresh lemon juice

  • Mint leaves

  • Club soda

  • Sal de gusano or other chili salt (for the rim)

Instructions:

  • Rim the glass: Coat the edge of a highball glass with the Sal de gusano or chili salt.

  • Prep the glass: Slap a few mint leaves between your hands to release their oils, place them in the glass, and fill with ice (cubes or an ice spear).

  • Combine: Add the mezcal, cantaloupe juice, agave syrup, and lemon juice into a cocktail shaker. (Optional: add a little extra mint directly into the shaker if you prefer a stronger mint flavor).

  • Shake: Fill the shaker with ice and shake vigorously for 15–20 seconds.

  • Strain: Double strain the mixture into your prepared highball glass over the ice.

  • Top and garnish: Top the cocktail with club soda and garnish with a fresh sprig of mint before serving.
