Yuku Savi is a deeply traditional, uncertified agave spirits project hailing from San Luis Atolotitlán in Puebla’s Mixteca region, backed by over 90 years of family distillation heritage. Produced by Maestros Felix Macedas and Antonia Pacheco, the brand serves as a passionate leader in the transition of the agave spirits industry toward environmental sustainability and fair trade practices. Yuku Savi directly finances ecological restoration and reforestation projects in the Mixteca regions of Puebla and Oaxaca using the proceeds from their spirits. They practice ultra-micro production—often yielding exclusive batches of no more than 100 to 180 bottles per expression. By consciously choosing to bottle their spirits as uncertified "destilados de agave" rather than CRM-certified mezcal, they maintain complete freedom to preserve their ancestral methods without industrial restrictions. Their purely artisanal process includes roasting endemic wild agaves in underground pits, milling with a traditional tahona, utilizing wild yeast for natural fermentation, and distilling in classic copper alembics.

Pitzometl: Crafted from the wild Agave Marmorata (locally known as Pichumetl) and typically bottled around 49% to 50% ABV. This expression presents a uniquely soft and gorgeous profile for a Puebla spirit. The nose is highly aromatic, filled with clover honey, dried florals, orange blossom, and sweet apple skins. On the palate, it delivers a vibrant vegetable sweetness and bright acidity, beautifully balanced by cinnamon, a touch of medicinal roots, and a subtle green-tea astringency that leads into a long, peppery finish.
Jabalí Cachetón: A highly intense and fascinating expression crafted from Agave Oteroi and bottled around 49% ABV. The aroma is immensely complex and savory, offering intriguing notes of red miso paste, smoked pork belly, and green peppercorn. On the palate, it exhibits a unique, slightly drying tannic quality that gives way to distinct flavors of wet stone, fresh apples, and oranges. It concludes with a profoundly earthy, grassy, and soil-driven finish.
Candelillo: Handcrafted from the tall, wild Agave Karwinskii and typically bottled at a robust 49% to 51.5% ABV. This expression is described as wildly intense and precise. The nose is incredibly bright and green, while the palate offers a highly dynamic, mouth-coating experience that is both sweet and tannic. It features bold, peppery flavors reminiscent of distilled pine resin and fresh green herbs.
Papalometl: An artisanal expression crafted from one of the most revered wild agaves of the Mixteca region. Known for its rich, robust character, it embodies the classic deep, earthy, and subtly sweet profile typical of Puebla’s traditional distillation, reflecting the unique biodiversity and mineral-rich soils of the Tehuacán-Cuicatlán Biosphere Reserve.
