ABOUT:
Macheé is unapologetically traditional and relies on a difficult, old-world technique: using a copper alembic with a refrescadera, the Maestros achieve a complete spirit in a single distillation pass, beautifully capturing the raw essence of the plant. All agaves (except Espadín) are wild-harvested at full maturity. They are roasted in a conical earth oven for 6 to 8 days, crushed by a donkey-drawn stone tahona, naturally fermented in Sabino wood vats using local well water and wild yeasts, and rested in glass for 6 to 12 months before bottling.

Espadín: Crafted from Agave Angustifolia (matured 8-12 years) and bottled at 45.6% ABV. This is an elegant, tropical expression. The nose features wet earth and melon, leading into a palate of citrus zest, pineapple, and dried fruit, finishing with a smooth note of white pepper.
Cuishe: Made from Agave Karwinskii (matured 12-15 years) and bottled at 49.2% ABV. A classic artisanal profile that offers distinct notes of tropical melon, wet earth, and citrus, perfectly balancing cooked agave with roasted pineapple and a delicate white pepper finish.
Tepextate: A rare expression crafted from 20-to-25-year-old Agave Tepextate and bottled at 48.4% ABV. Highly rich and distinctive, it delivers green jalapeño and grilled corn on the nose, evolving into a highly complex palate of elderflower, poached pear, pumpernickel, and coconut milk.
Verdito: Crafted from the hyper-local, endemic Agave Verdito (matured 10-12 years) and bottled at 50% ABV. This expression is highly fresh and herbaceous, offering aromas of resinous pine and mint that give way to a crisp palate of tart green apple and light minerality.
Amarillo: Made from the rare, endemic Agave Amarillo (matured 10-12 years) and bottled at 49.8% ABV. A complex and savory spirit featuring notes of fall baking spices and unripe mango, which beautifully transition into a buttery caramel mouthfeel with a lingering earthy finish.
Ensamble: A harmonious blend of Verdito, Amarillo, and Espadín agaves, bottled at 47.3% ABV. This well-balanced expression highlights notes of cacao nibs and countryside herbs, concluding with fresh herbal sweetness and a whisper of light smoke.
Coyote Puntas: A bold, high-proof standout crafted from Agave Coyote/Americana (matured 8-15 years). Captured specifically from the potent puntas (the heads of the distillation) and bottled at a robust 55% ABV, it explodes with aromas of orange blossom and peppercorn, beautifully layered with chai spice and profound earthy minerality.
