We've always known mezcal, and before that, we experienced it in our closest family environments, starting when we were children. It's inherent to our region; it's part of our worldview. Mezcal heals, it heals the soul, it also accompanies you through your sorrows, and if you want, it helps you forget them. When a child is born, you drink mezcal. We drink mezcal to be sentimental, to tap into creativity and feelings, so we're less concerned about ridicule. It's not about suffering, but about getting emotional. Enjoying. When you're Oaxacan, it doesn't matter if you know how to make it or not; they give you mezcal, they give it to you, and when you drink it, you drink it.
We conceive of mezcal as a living entity, which from its production to its consumption remains in constant evolution of flavor, aroma, and texture, which allows us to evoke the terroir alluding to the region, the agave, and the hands that intervene in its creation.

Mezcal Koch offers a range of authentic, traditionally-made mezcals deeply rooted in the culture and cosmovision of Oaxaca. They conceive of mezcal as a "living entity" that constantly evolves in flavor, aroma, and texture, preserving the essence of the terroir and the hands that create it. Their offerings include distinct expressions such as Mezontle, Elemental, and Prieto, embodying the emotional and ceremonial spirit of Oaxacan tradition.
Maguey Espadin: Initially, it's a sweet, smoky aroma reminiscent of a fireplace, with notes of ripe fruit. A strong herbal presence, with a slightly minty finish, with hints of violets and pineapple. Lingering flavor of cooked pineapple with notes of coconut, roses, and freshly cut herbs. Ripe peach and cinnamon on the midpalate, with hints of white pepper and a subtle sherry jelly flavor on the finish.
Maguey Arroqueño: Initially, wood ash with hints of citrus, herbs, and river stones, which soon give way to aromas of roasted meat, with a light, long-lasting smokiness. The finish is pungent with ginger and tangerine peel. Medium-bodied, with sweet attributes, caramel coffee flavors, and a fruity finish with hints of white grapes, orange, ripe pineapple, and quince.
Maguey Lumbre: Fresh floral notes that combine roses and cherries; nuances reminiscent of almonds, pine nuts, butter, and camphor. Minerals with floral and vegetal notes.
