MEZCALS OFFERED:

Mezcal Derrumbes offers a distinct line of mezcals, each representing a single Mexican state within the Appellation of Origin to showcase its unique Terroir, traditions, and production styles. Their collection highlights the vast biodiversity of agave species and ancestral techniques across regions like Oaxaca, Michoacán, San Luis Potosí, Zacatecas, Tamaulipas, and Durango. Each bottle provides a unique tasting experience, allowing for a journey through the heart of Mexico's rich spirit-making heritage.

  • Joven Espadín / Tobala: Pit roasted with black oak and tahona ground, it goes thru a wild fermentation using pulque as aid and water from the ancestral Zapotec town of Mitla. The result is a round, full body mezcal with a light smokiness that gives way to its minerality and delicate fruitiness.

  • Joven Chino / Alto: It is fermented under the red clay floor of the taberna in pinewood lined pits to protect it from low temperatures to be then distilled in Michoacán’s own Philippine-style stills made of wood staves and copper over direct flame. This exquisite sensorial experience comes from renowned maestro Guadalupe Perez from the village of Tzitzio.

  • Joven Salmiana Crassispina: The result is an incredibly unique mezcal that reflects the flavors of its surroundings like no other. This floral and herbaceous mezcal from the village of Charcas has just the right touch of sweetness to balance its delicate intensity.
