ABOUT:

Fósforo Mezcal (whose name translates to "match" or "flame") is a premium, women-led spirits house born from a partnership between founders Lisa Detwiler and Jim Cramer, and fourth-generation master mezcalero Aarón Alva Sánchez alongside his wife Mariana Hernández. Proudly produced outside of Oaxaca in the rugged, high-elevation terrain of Huehuetlán el Grande, Puebla, the brand has helped put Poblano mezcal on the map. Fósforo is highly dedicated to the notoriously difficult-to-cultivate Tobalá agave (often called the "king of agaves"). Aarón uses his lifelong expertise in sustainable agave farming to grow these plants for 8 to 15 years before harvesting. Utilizing artisanal methods—cooking the piñas in underground earthen pits for up to 8 days, fermenting naturally in open-air wooden vats, and double-distilling in copper—Fósforo yields exceptionally refined, highly approachable mezcals that are intentionally less smoky and presented with the luxury of a fine cognac.

  • Tobalá (Joven): The brand’s unaged, crystal-clear expression serves as a pure showcase of the prized Tobalá agave. It is a highly nuanced and evolving sipping mezcal. It presents an inviting nose with pronounced aromas of ripe fruit, bell pepper, sweet honey, and wet stone. On the palate, it delivers a deeply complex, floral character that finishes with a subtle, remarkably smooth smokiness.

  • Tobalá Penca: A completely unique, first-of-its-kind expression in the US market. Instead of aging in wood barrels, this spirit is aged for one to three months in small glass carboys alongside a freshly roasted agave penca (leaf). This innovative process gives the spirit a brilliant amber hue and a deeply savory profile without the influence of oak. The nose reveals layers of young leather, butterscotch, spices, and lemongrass. The palate explodes with sweet floral notes and toasted nuts, leaving a lingering, full-bodied mouthfeel with mellow smoky undertones.

  • Ensamble: Thoughtfully crafted as the ultimate cocktail mezcal, this blend marries the floral depth of wild Tobalá with the vibrant, fruit-forward minerality of Espadilla (a cultivar cousin of the popular Espadín native to Puebla). It perfectly balances light, elegant smoke with a highly complex profile of bright citrus, early springtime aromatics, papaya, white pepper, and pear skin.
