For the lover of the bitter things in life, this mezcal Negroni riff is everything you've ever wanted in a cocktail. Created by the legendary bartender Charlotte Voisey, this is an exquisitely balanced drink that swaps out the usual Negroni ingredients for a brighter, lighter, and more complex flavor profile. It's so simple to make, yet its flavor is anything but.

Ingredients:

  • 1 oz mezcal

  • 1 oz Aperol

  • 1 oz Lillet Rosé

Instructions:

  • Add all ingredients to a mixing glass with ice.

  • Stir 20-30 seconds until proper dilution is reached.

  • Strain into a coupe or Nick & Nora glass and serve.
