Mezcal Tropical
Mezcal Tropical is a lush, tropical riff on the classic Daiquiri that expertly marries the roasted agave and oak-kissed notes of reposado mezcal with the rich sweetness of a house-made banana syrup. Shaken vigorously with fresh lime juice and strained over ice, this vibrant, fruity sipper is elegantly finished with a fresh banana slice and a warm dusting of cinnamon.
Ingredients:
2 oz Ilegal Mezcal Reposado
1 oz house banana syrup*
1 oz fresh lime juice
Banana Syrup
2 bananas, peeled and sliced into small pieces
1 cup granulated sugar
1 cup water
1 tsp lemon juice (optional)
Instructions:
Shake and strain over ice, then garnish with cinnamon and a banana.
Combine the sliced bananas, sugar, and water in a saucepan over medium heat and bring the mixture to a boil, stirring occasionally. Reduce heat to low and let simmer for about 15-20 min, or until the liquid has thickened, then remove from heat and let cool for a few minutes.
Using a blender, puree the banana mixture until smooth. If desired, add lemon juice and stir to combine. Let cool completely before using in the cocktail.
