Mezcal Stone Sour

Introducing the Mezcal Stone Sour, a bold and smoky take on a classic sour. This cocktail artfully blends the rich flavor of mezcal with the vibrant tang of fresh lemon and orange juices, perfectly balanced by a silky egg white foam. It's a truly sophisticated and refreshing drink that's sure to impress.

Ingredients:

  • 50 ml Del Maguey Vida Clásico Mezcal

  • 22.5 ml Lemon juice (freshly squeezed)

  • 22.5 ml Orange juice (freshly squeezed)

  • 15 ml Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)

  • 15 ml Egg white (pasteurized) or Vegg White vegan egg white alternative, or Aquafaba (chickpea water), or Cocktail foamer

  • 2 dashes Orange Bitters by Angostura

  • 3 drop Saline solution 4:1 (20g sea salt to 80g water)

Instructions:

  • Select and pre-chill a Toddy Glass.

  • Prepare garnish of orange juice and Classico Tajin Seasoning rim & orange zest twist.

  • Shake all ingredients with ice.

  • Strain back into the shaker.

  • Dry shake (without ice) to emulsify.

  • Fine strain into a chilled glass.
