Mezcal Negroni Sour
A creative hybrid that drinks like a sour but tastes like a Negroni. It pairs mezcal with Campari, a fortified wine (Byrrh), fresh citrus juices, and an egg white for a bittersweet, frothy, and highly complex cocktail.
Ingredients:
1 oz. mezcal
½ oz. reposado tequila
¾ oz. Byrrh
1 oz. Campari
2 dashes saline solution (1:1 water to Sel Gris)
1 egg white (pasteurized, if you like)
¾ oz. orange juice
½ oz. lemon juice
Instructions:
Add all of the ingredients to a shaker and shake (without ice) to combine. Add ice and shake again. Double strain into a chilled coupe.
