High Noon
High Noon is a vibrant, spirit-forward cocktail that brings together a split base of smooth reposado tequila and smoky mezcal with the sweet, bitter complexity of orange-red aperitivo. Stirred with dry vermouth to add a clean, herbal crispness, this beautifully balanced, light-amber sipper is strained into a chilled coupe and elegantly finished with a fragrant, expressed grapefruit zest twist.
Ingredients:
30 ml Pink grapefruit juice (freshly squeezed)
4 drops of saline solution (20g sea salt to 80g water) or a mere pinch of salt
Instructions:
Select and pre-chill a coupe glass.
Prepare a garnish of grapefruit zest twist.
Shake all ingredients with ice.
Fine strain into a chilled glass.
Express grapefruit zest twist over cocktail and use as garnish.
