Guillotine No. 2
Guillotine No. 2 is a deliciously bittersweet, spirit-forward aperitivo that masterfully anchors the earthy smoke of artisanal mezcal with the deep, vegetal complexity of Cynar and the crisp botanicals of dry vermouth. Stirred with a touch of saline to elevate its robust flavors and fine-strained into a chilled coupe, this bold, late-night digestivo is elegantly finished with a sweet skewered maraschino cherry.
Ingredients:
15 ml Strucchi Dry Vermouth
6 drops of saline solution (20g sea salt to 80g water) or a mere pinch of salt
Instructions:
Select and pre-chill a coupe glass.
Prepare a garnish of skewered Luxardo Maraschino Cherry.
Stir all ingredients with ice.
Fine strain into a chilled glass.
Garnish with a skewered cherry.
