Guillotine

The Guillotine is smoky, earthy, and herbal. A dry mezcal Manhattan with a hefty dose of Cynar, this three-ingredient cocktail exemplifies Yanni Kehagiaras’ approach to cocktails.

Ingredients:

  • 1 1/2 ounces mezcal, preferably Del Maguey Vida

  • 1 ounce Cynar

  • 1/2 ounce dry vermouth, preferably Dolin

Instructions:

  • Combine all ingredients in a mixing glass with ice and stir until chilled and diluted.

  • Strain into a chilled cocktail glass.
