Guillotine
The Guillotine is smoky, earthy, and herbal. A dry mezcal Manhattan with a hefty dose of Cynar, this three-ingredient cocktail exemplifies Yanni Kehagiaras’ approach to cocktails.
Ingredients:
1 1/2 ounces mezcal, preferably Del Maguey Vida
1 ounce Cynar
1/2 ounce dry vermouth, preferably Dolin
Instructions:
Combine all ingredients in a mixing glass with ice and stir until chilled and diluted.
Strain into a chilled cocktail glass.
