El Botanero

El Botanero is a tropical, vibrant cocktail that strikes a perfect balance between lush sweetness and savory Oaxacan flair. Built directly in an old-fashioned glass, beautifully rimmed with lime and traditional sal de gusano (agave worm salt), it begins with chopped fresh pineapple muddled alongside tart lime juice. Combined with smooth mezcal, sweet agave nectar, and rich pineapple juice, the drink is stirred over fresh ice and playfully finished with a pineapple chunk skewer dusted in additional worm salt.

Ingredients:

  • 45 ml Mezcal Mitre Origen

  • 120 ml Pineapple Juice

  • 10 ml Agave Honey

  • 15 ml Lemon juice

  • 1/2 cup chopped pineapple

  • Lemon

  • Worm salt

  • Ice

Instructions:

  • Place the pineapple chunks in an old-fashioned glass rimmed with lime and worm salt. Add the lime juice and muddle for 15 seconds. Add Mezcal Mitre Origen, ice, pineapple juice, and agave syrup, and stir for 10 seconds.

  • Decorate with a pineapple skewer and worm salt.
