Egg White Mezcal Cocktail

A refined sour that combines the bold smokiness of mezcal with the rich, velvety texture of a shaken egg white. It is perfectly balanced with citrus and sweetener for an elegant, frothy presentation.

Ingredients:

  • 60 ml (2 oz) mezcal

  • 30 ml (1 oz) fresh lime juice

  • 20 ml (0.75 oz) simple syrup

  • 1 fresh egg white

  • 2–3 dashes of Angostura bitters

  • Ice

Instructions:

  • Add mezcal, lime juice, syrup, and egg white to a cocktail shaker.

  • Dry shake (without ice) for about 15 seconds. This whips the egg white into a frothy base.

  • Add ice, then wet-shake for another 15–20 seconds, until the shaker is frosty.

  • Double strain into a coupe or rocks glass.
