Espadín (Joven): The vibrant and unaged cornerstone of the collection, crafted from 100% Agave Angustifolia. During the second distillation, the Maestro Mezcalero expertly extracts only the pure "heart" of the distillate to ensure exceptional aromatic complexity and minimal methanol. The nose is greeted by a symphony of sweet cooked agave perfectly intertwined with hints of green apple and an inviting touch of wood. On the palate, it delivers the raw, genuine essence of chopped agave and warm caramel, layered with a distinct thread of mesquite smokiness. It concludes with a remarkably long, warm, and sweet finish.
Ensamble: A highly unique and rare artisanal blend that masterfully brings together three distinct agaves: cultivated Espadín, alongside wild-harvested Tobalá and Jabalí. Because the wild Jabalí agave is notoriously rebellious, expansive during fermentation, and requires an extensive maturation process, only a handful of brands worldwide offer this specific three-agave combination. The aroma leads with rich cooked agave and rustic campfire smoke.
