Begin with Octopus Ceviche featuring ají amarillo leche de tigre, avocado mousse, and tostada raspada. Continue with stuffed squash blossom filled with huitlacoche and Oaxaca cheese, followed by tender braised beef cheek in a rich chile negro reduction. Finish with a silky Carlota lime custard, María cookie crumble, and café de olla caramel.
