It builds a bright, lively base by combining 2 oz of the wild Espadín mezcal, 0.75 oz of fresh lime juice, 0.5 oz of simple syrup, muddled mint, and a fresh egg white in an ice-filled shaker. Vigorously shaken to create a rich texture and poured over ice, it is typically topped with bubbly ginger ale for an invigorating lift. This vibrant, tradition-inspired sipper is elegantly finished with a dehydrated orange slice, a sprig of rosemary, and a signature estate flower, perfectly capturing the energy of Oaxaca.

Ingredients:

  • 2 oz Casa Xamu Espadín Salvaje mezcal

  • ¾ oz fresh lime juice

  • ½ oz simple syrup

  • 1 egg white

  • Ice

  • Muddled mint

  • Estate flower for garnish

Instructions:

  • Fill a shaker with ice.

  • Add Casa Xamu Espadín Salvaje mezcal, lime juice, and syrup.

  • Add the egg white and shake vigorously.

  • Strain into a glass filled with ice. Garnish with a dehydrated orange slice and a sprig of rosemary.
