After ten years of research on mezcal and wild agaves, we classified our mezcals under two principles

We have 2 processes: Artisanal (A) and Ancestral. Both play a crucial role in defining our mezcals, and each method brings distinct nuances to the Mezcal, mainly distinguishable by their respective distillation materials.

We have classified the subspecies of wild agave using a numerical system, which ranges from 1 to 5, to evaluate the sugar content. Lower numbers will have a higher sugar content and will have sweeter, more floral flavors, while higher numbers will have a lower sugar content and produce more herbal flavors.

MEZCALS OFFERED:

Mezcal Amarás is an award-winning, sustainably-minded brand built entirely on a philosophy of love—love for the land, the culture, and the local communities that harvest it. Driven by their holistic "From Seed to Sip" cycle, Amarás became the world's first certified carbon-neutral mezcal brand in 2018. They actively reverse deforestation by planting ten agaves for every single plant they harvest, using leftover agave fibers to make compost and adobe bricks.   • Amarás Espadín: The flagship steward of the brand’s sustainable mission, this mezcal is naturally handcrafted from choice 8-year-old Espadín agaves grown in the mountains of Oaxaca. It serves as a gentle invitation into a world of incredible smoothness, featuring vibrant floral aromas on the nose that transition into bright citrus, soft wood, and sweet mango on the palate, culminating in a balanced, lightly spiced finish of cinnamon and pepper.

  • Amarás Cupreata: Acting as a gateway to the intense biodiversity of Mexican agaves, this expression is crafted by traditional master distillers in Guerrero using wild 13-year-old Cupreata agaves harvested from precarious mountain slopes. The nose opens with deep, complex aromas of roasted pumpkin seeds, cocoa, leather, and wet earth. The palate is bright, earthy, and beautifully vegetal with unexpected sparks of jalapeño peppers, ending in a remarkably long, fresh, and savory-spiced finish.

  • Amarás Espadín Reposado: Elevating the classic Espadín spirit, this expression undergoes a meticulous aging process for a minimum of three months in barrels carved from two distinct types of oak. The wood-maturation perfectly rounds out the spirit, giving it a rich, golden hue and transforming the crisp agave into a mellow sipping experience dominated by warm notes of comforting vanilla, toasted almonds, and soft caramel.

  • Verde Amarás: A label-free, ultra-authentic expression designed to celebrate and support contemporary Mexican art by featuring a rotating collection of unique labels created by local artists. While modern in presentation, the mezcal itself is deeply artisanal—crafted from 7-year-old Espadín agaves that are cooked using a distinct trio of woods (ocote pine, holm oak, and pepper tree). This unique wood combination imparts a highly stylized, creamy texture with a bold, complex nose of smoke and sandalwood, balanced beautifully on the palate by sweet ripe peach and a lingering fiery kick of black pepper.
