Gusto Histórico
ABOUT:
Gusto Histórico is a highly revered, curated brand specializing in small-batch, hyper-traditional destilados de agave (agave spirits). Founded by Marc Kolber, one of the original co-founders of the famed Oaxacan tasting room Mezcaloteca, the brand was created to preserve and champion the pre-industrial heritage of rural distillation. The name “Gusto Histórico” refers directly to the "historic taste" of a spirit—the idea that true mezcal offers a sensory window into the specific geography, history, and community of its origin. Acting as an independent bottler, Gusto Histórico partners with legendary maestro mezcaleros (such as Victor Ramos, Emanuel Ramos, and Ignacio Juárez), primarily in the Miahuatlán region of Oaxaca. Dedicated to resisting the industrialization and homogenization of the "mezcal boom," the brand ensures that every batch is produced using strictly ancestral methods—often utilizing horse-drawn tahonas and historic single-pass refrescadera (reflux condenser) stills. Because they release distinct, ultra-small micro-batches rather than mass-produced core lines, each bottle is a unique, high-proof time capsule of Oaxacan terroir.

MEZCALS OFFERED:
Tequilero (by Victor Ramos): An extraordinary and highly acclaimed expression crafted from 100% Agave Tequilana (the same plant used for Tequila, but grown and distilled in Miahuatlán, Oaxaca). Distilled using a refrescadera still and bottled at a robust 51.1% ABV, it completely redefines the Tequilana agave. The nose is packed with sweet citrus (lemon, lime, grapefruit), fresh florals, and a distinct chalky, wet-stone minerality. On the palate, it is exceptionally balanced and creamy, offering notes of vanilla icing, sweet spearmint, and tart kiwi, culminating in a pristine, mineral-driven finish.
Madrecuixe (by Victor Ramos): A masterclass in Miahuatlán terroir, crafted from 100% Agave Madrecuixe (part of the Karwinskii family) and bottled at roughly 52% ABV. Despite the high proof, the alcohol is seamlessly integrated. The spirit is bright and refreshing on the nose, delivering highly unique aromatics of crushed peanut shells and dry tobacco leaf. The mouthfeel is silky, offering complex, savory-sweet flavors of sweet carrot, salted caramel, fried snap peas, and sage.
Cucharillo (by Emanuel Ramos): Technically a Sotol rather than a mezcal, this rare expression is crafted from wild Dasylirion Serratifolium (known locally as Cucharillo) and bottled around 48.5% ABV. The aroma is vibrantly herbal and citric, featuring notes of oregano, bay leaves, thyme, and ripe passion fruit. The palate is creamy and buttery, displaying a fascinating mix of wild honey, cooked sweet potato, and bright citrus, finishing with a lingering, slightly earthy spice.
Puntas & Ensambles (Various Maestros): Because Gusto Histórico focuses on unique batches, they frequently release rare ensambles (field blends) and puntas (the highly potent, flavor-packed first cuts of the distillation). Standouts include Ignacio Juárez’s high-proof blends of Bicuixe, Espadín, and Madrecuixe (sometimes uniquely distilled with fresh lime), as well as wild Tepextate and Jabalí blends. These expressions are universally celebrated for their massive, unadulterated flavor profiles, complex mouthfeels, and unapologetic reflection of their makers' traditional craftsmanship.
